HOW TO PREPARE THE FAMOUS NIGERIAN JOLLOF

Have you heard or tasted the famous Nigerian Jollof? I bet you are not Nigerian if you’ve never come across Nigerian Jollof

Nigerian Jollof is also called Jollof rice, it is the famous Nigerian food prepared at special events, and also for special occassions.

You can never go wrong with preparing Nigerian Jollof if you follow the the steps below

Ingredients for Preparation

  • 1/2 cup Vegetable oil
  • 2 big onions
  • 50 grams butter/margarine
  • 3-4 pieces bay leaves
  • 1 tablespoon curry
  • 240 grams tomato paste
  • 4-5 redball pepper (tatashe)
  • tablespoon thyme
  • 8 cubes seasoning
  • 1 tablespoon salt
  • 4 medium-size tomatoes/ one can chopped tomatoes
  • 3 pieces Scotch bonnet pepper (Atarodo) or more
  • 1 cup chicken/beef stock
  • 2 garlic cloves

Procedure for cooking

  • First, wash thoroughly and season your beef/chicken, and cook until tender. Remove the stock, and set it aside.
  • Wash and blend the tomatoes, red ball pepper, scotch bonnet pepper, 11/2 onions, and the garlic cloves together
  • Dice the remaining half onion and set it aside.
  • Thoroughly wash the rice until the water is clear
  • Place the frying pot over medium heat, add the vegetable oil, diced onions, tomato paste, and bay leaves, and stir to combine.
  • Cook for about 2 minutes, or until they become transparent. (continue to stir to avoid burning)
  • Stir thoroughly after adding the blended ingredients (tomatoes, scotch bonnet pepper, garlic, onions, and red ball pepper).
  • Allow it boil for 5 minutes, stirring frequently, before adding your chicken/beef stock and stirring well.
  • Cover and cook for 5 minutes with spices (curry, thyme, salt, pepper, and margarine).
  • Open and well stir, then add the washed rice and thoroughly stir it into the mixture.
  • For the first 20 minutes, cover with foil paper, reduce the heat, and let it cook.
    After 20 minutes, open the lid and taste for salt; if more is needed, add it and cook for another 20-25 minutes.
    The rice should be soft and delicate at this point. With a knife or turning stick, stir well to the bottom of the saucepan
  • Allow the rice to burn for the true Nigerian Jollof party flavor by covering it and increasing the heat for roughly 5 minutes.
  • Turn off the heat and return your attention to the pot’s bottom.
  • Remove from the fire and serve your smoky Nigerian Jollof Rice.
  • While still warm, serve with any cold beverage of your choice.
