James started cooking when he was young, after being introduced to him by his maternal grandmother who had lessons with him every day after school. After adopting baking as one of his greatest skills, he started a baking blog from which he frequently wrote columns in the Sunday Mail newspaper’s ‘7 Days’ supplement.

The book Brilliant Bread earned a Best Cookbook nomination at the 2013 André Simon Awards and won the 2014 Guild of Food Writers Award for Best Cookbook.

During the first summer of his medical degree at the University of Glasgow, he worked washing dishes in a small Glasgow delicatessen. Already an avid bread baker, Morton was exposed to the wide variety of bread production and results. Since then, Morton has studied pastry as a science rather than a craft.

He often preferred to read peer-reviewed cereal magazines rather than cookbooks. Morton then watched The Great British Bake Off (series 2) in 2011. He decided to apply for the show after pressure from his university friends. In his later appearance on the show, Morton reached the finals with pastries such as an “oak-framed gingerbread barn” and “a double Paris-Brest Choux pastry”, ultimately losing to the winner.
