BIOGRAPHY OF CAT CORA | WHO IS CAT CORA?

Cat Cora (Catherine Ann Cora) is an American professional chef, author, restaurateur, editor, television host and personality, actress, passionate philanthropist, health and fitness expert, and lifestyle entrepreneur.

She showcased her culinary knowledge as a judge on ABC’s Family Food Fight competition series and founded Little Kitchen Academy, a Montessori-style culinary school for 3-year-olds.

Outside of the kitchen, she is known for her philanthropic efforts. Cora is the President and Founder of Chefs for Humanity. Chefs for Humanity is an organization born in response to the 2004 tsunami disaster. The foundation is dedicated to reducing world hunger by supporting humanitarian relief and promoting nutrition education.

She is also the published author of three best-selling cookbooks, a children’s book, and, in 2015, her gritty and remarkably candid memoir, Cooking as Fast as I Can: A Chef’s Story of Food, Family, and Forgiveness.

Cora partnered with WW on a premier health food destination inside Brooklyn’s Barclays Center called WW FreestyleTM Café: BKLYN in 2018. She was also proud to be featured in the Mississippi Arts + Entertainment Museum’s Kitchen permanent collection. Tabletop exhibit in Meridian, Mississippi.

Cora was born to Virginia Lee (née Brothers) and Spiro Pete Cora. Cora’s paternal grandparents were from Skopelos, Greece. His father Spiro and his grandfather were restaurateurs. Cora was raised by a family for whom cooking and eating were the centers of life. Meals at his family’s home often combined southern spices with fresh cheeses and homemade olives sent by relatives from the island of Skopelos. Cora shares these and other stories in her memoir, Cooking as Fast as I Can: A Chef’s Story of Family, Food, and Forgiveness.

In 2013, the celebrity chef married Jennifer after 15 years together. They had had a long-term domestic partnership before getting married. The couple resided in Santa Barbara with their four sons who they obtained through in vitro fertilization.

Cora presented a business plan to her father and grandfather when she was 15, knowing they could help her. She earned her BS in Exercise Physiology and Biology from the University of Southern Mississippi, then enrolled at the Culinary Institute of America in Hyde Park, New York. Cora partnered with various companies, including Macy’s, when in 2008 they opened Cat Cora’s Que (CCQ), a restaurant in Costa Mesa, California.

She was co-host of Food Network’s Kitchen Accomplished and launched her own line of cookware in conjunction with Starfrit, Canada’s leading supplier of food preparation products in 2011. Cat also co-founded Chefs For Humanity in January 2005, he describes himself. as “a mission-driven grassroots coalition of chefs and culinary professionals to be rapidly able to raise funds and provide resources for important emergency and humanitarian relief, nutrition education and initiatives related to hunger around the world.”

She is co-host of the American reality TV show Around the World in 80 Plates alongside Curtis Stone. It premiered on May 9, 2012 on the Bravo cable television network. The show follows twelve chefs taking part in a culinary race across ten countries in 44 days.

POPPERS JALAPENO CUIT WW

INGREDIENTS

jalapeño pepper(s), 1 medium

crumbled feta cheese, 4 tbsp.

fat-free plain Greek yogurt, 1 tbsp

fresh oregano, ¼ tsp. tsp, finely chopped

garlic powder, 1 pinch, or to taste

panko breadcrumbs, 2 tbsp

kosher salt, 1 pinch, or to taste

black pepper, 1 pinch, or to taste

egg(s), 1 large

plain fat-free Greek yogurt, 1 tbsp. tablespoons, for garnish (optional)

fresh lime juice, ⅛ tsp. tsp, or to taste, for garnish (optional)

lime zest, ⅛ tsp. tsp, or to taste, for garnish (optional)

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Halve jalapeño lengthwise, cut off stem and scrape out seeds; put aside.
  3. Combine feta, yogurt, oregano and garlic powder in a cup. Combine panko, salt and pepper in another cup.
  4. In a small bowl, whisk the egg.
  5. Divide the cheese mixture between the jalapeño pepper halves. Dredge each half in the egg mixture, then roll in the panko, pressing lightly so the panko sticks to the jalapeño.
  6. Carefully place the coated peppers, cut side up, on a small baking sheet. Bake until filling is bubbling and panko is golden brown, about 30 minutes.
  7. Remove from tray, let cool for 10 minutes and serve while still warm (add an optional topping of fat-free plain Greek yogurt mixed with lime juice, lime zest and salt).
  8. Donne 1 portion (2 poppers).

TOTS ZUCCHINI WITH TZATZIKI FETA-MINT

INGREDIENTS

For the mint feta tzatziki:
1 cup Greek yogurt, such as Fage
2 Tbsp crumbled feta cheese
1 Tbsp fresh lemon juice
2 Tbsp extra virgin olive oil
1 minced garlic clove
1 teaspoon kosher salt
2 teaspoons finely chopped mint
1 medium cucumber, peeled

For the zucchini toddlers:
6 medium zucchini, ends trimmed
2 large eggs, beaten
1/2 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 tsp finely chopped oregano
1 clove garlic, minced
1 tbsp 1 tsp kosher salt
1 tsp freshly ground black pepper

INSTRUCTIONS

1. Prepare the tzatziki with feta and mint: in a medium bowl, combine the yogurt, feta, lemon, olive oil, garlic, salt and mint.

3. Prepare the zucchini: Using the thin end of a box grater, grate the zucchini to make about 3 cups. Transfer to a clean, low-lint linen cloth. Wring out as much moisture as possible.

5. Using your hands, take about 2 tablespoons of the toddler mix and form an inch long and a quarter around the toddlers. Wring out excess moisture, if necessary. Repeat with the rest of the mixture. Freeze toddlers for about 2 hours or overnight.

6. Place small frozen foods in the air fryer tray. Air fry at 270 degrees for 10-12 minutes. Check and rotate toddlers about halfway for even crispiness. Serve hot with a side of tzatziki with feta and mint.
