“Her battle with ALS is over, she is pain free and I hope she is dancing to ‘I Will Survive’ with my dad right now,” Valastro said in an Instagram post. Her rep told People Magazine that Mary’s condition had steadily worsened over the past few months and she passed away surrounded by her family. She also leaves behind her husband, Sergio Piccinich, Sr. ALS, also known as Lou Gehrig’s disease, which is a neurological disease that affects the nerves controlling voluntary muscle movement and has no cure.

Mary Valastro was born in Altamura, Italy, and emigrated to the United States with her family when she was 6 years old. They settled in Hoboken, and there, at age 12, she met her future husband Bartolo Valastro. The couple married in 1965, shortly after buying the Hoboken Bakery, and they had five children together, Grace, Maddeline, Mary, Lisa and Buddy. In addition, she is survived by her 14 grandchildren.

PREPARATION OF THE CANNOLI BUDDY VALASTRO RECIPE

Place the flour, granulated sugar, 2 tablespoons lard, vinegar, one egg, cinnamon and salt in the bowl of a stand mixer fitted with the hook attachment. Blend on low-medium speed until well blended, about 10 minutes. (You don’t have to stop the motor to scrape the sides because this dough forms into a ball when ready.)

Remove the dough from the bowl, wrap it in plastic wrap, and let it rest at room temperature for at least 30 minutes, or up to 3 hours, to soften the dough and make it less elastic. Lightly coat the dough in flour and roll it out in a pasta machine on the thickest setting (usually number 1). If you don’t have a pasta machine, use a rolling pin to roll out the dough as thin as possible on a lightly floured surface, to a maximum thickness of 1/8 inch.

Using a four-inch round cookie cutter (or the mouth of a four-inch bowl), punch circles out of the dough. Working with one circle at a time, grasp the circles at the 3 o’clock and 9 o’clock positions and gently pull into a five inch long oval. (If you plan to make a lot of cannoli, you can also bend a round cookie cutter into an oval shape by pressing it down on two sides.) Gather the excess dough, knead it together, roll it up, and cut the dough again. ovals. You should have 10 ovals.

Beat the remaining egg in a small bowl. Fill a wide, deep, heavy saucepan two-thirds full of lard (the saucepan should be wide enough and/or deep enough to hold four cannoli shells without squeezing or touching) and set over medium-high heat. Heat the lard between 350°F and 375°F. Line a large plate or tray with paper towel.

Wrap an oval lengthwise around a wooden dowel 6 inches long and 3/4 to 1 inch in diameter. Be sure to wrap it loosely, leaving a little space between the dowel and the pastry dough so that when fried, the inside is also cooked. Use a pastry brush to paint one end of the shell with egg. Pull the brushed end of the egg over the opposite end and press them together, sealing the shell around the peg. (To speed up the egg wash process, you can do as we do at Carlo’s and arrange the shells in an overlapping fashion, then brush the egg wash “lips”.) Repeat with two more pegs and shells.

Carefully lower the gudgeons into the oil and fry the shells until golden brown, turning with a slotted spoon while frying, about 10 minutes. Using the spoon, carefully remove the dowels from the lard and transfer them to a paper towel-lined plate to cool.

When the shells are cool enough to touch, about 10 minutes, remove the pegs. Repeat shaping, frying and cooling for two more batches, three more in the second batch and four in the last, until all the shells have been fried and removed from the pegs.

To prepare the cannoli cream, place the ricotta, sugar and cinnamon in the bowl of a stand mixer fitted with the paddle attachment. (If you don’t have a stand mixer, use a hand mixer.) Paddle on low to medium speed until the sugar is completely dissolved, 2-3 minutes. The best way to tell if it’s dissolved is to taste the mixture until you can’t detect any specks. Be careful not to overmix or the mixture will become soft and runny.

Add fries and paddle until evenly distributed, about 30 seconds. Stop so as not to break the chips. (Note: You can make the cream ahead and store it in an airtight container in the fridge for up to 5 days.)

When you are ready to fill and serve the cannoli, put the cannoli cream in a piping bag fitted with the plain #7 tip. Carefully insert the tip halfway into a shell and insert the cream by pulling tip to fill it to the end. Insert the tip through the other side of the hull, towards the center and the pipe and pull again to ensure the hull is completely filled end to end. Repeat with the remaining shells. Sprinkle the finished cannoli with powdered sugar and serve.
